Chef Clayton cooks a fresh, globally inspired menu every week from Alaska-sourced ingredients — fresh never frozen, with a full vegetarian version of every dish. Here's what recent weeks have looked like.

Week of July 25

  • Biscuits & gravy w/ scrambled cheesy eggs, AK potato hash & local herbs
  • Braised beef pot roast w/ garlic mashed potato & brussels sprouts
  • Carnitas w/ refried beans, cilantro rice & onion relish
  • Jerked chicken w/ farro salad, arugula, tomato & pineapple salsa
  • Moroccan chicken stew w/ preserved lemon, harissa & AK barley cous cous

  • Five spice chicken lo mein w/ AK cabbage & scallions

  • Bacon cheddar broccoli frittata w/ AK potato hash, cherry tomato & pesto
  • Five cheese lasagna w/ Italian sausage, Palmer spinach & alfredo
  • Tikka masala w/ cardamom rice & roast garlic naan
  • Meatloaf w/ AK Grown mashed potato, beets & mushroom gravy
  • Alder smoked pork tenderloin w/ gratin potatoes, roast broccoli & carrots

  • Strawberry rhubarb French toast w/ cheesy eggs, sausage & maple butter
  • Pasta bolognese w/ fresh pappardelle, Alaskan basil & pecorino
  • Kung Pao chicken w/ scallion fried rice & AK cabbage
  • Chimichurri steak salad w/ farro, arugula, beets & feta cheese
  • Buffalo chicken stuffed sweet potato w/ celery pico & blue cheese dressing
